Grandma's Magic Cake
Grandma's Magic Cake only requires 7 ingredients, and making it is fool-proof.
The cake has a dense layer on bottom, custard-like layer in the middle, and a fluffy cake layer on top.
Beat 4 egg whites until stiff.
In another bowl, beat 4 egg yolks, 1/2 cup sugar, 1 Tb water & 2 tsp vanilla until light.
Add 1 stick/125g melted butter, beat for another minute.
Mix in 3/4 cup GF flour, then 2 cups lukewarm milk - beat well.
Gently fold in stiff egg whites.
Pour into greased 8" x 8" (20 x 20 cm) baking dish (do not use spring form because batter is too liquid
Bake @ 325 F/170C oven for about 60 minutes or until top is golden.
Cool in pan for at least 3 hours.

LAYER 1- Blend 2 cup mix of nuts - cashews, almonds, walnuts and/or
seeds for nut free eg sunflower/sesame/chia/linseed/pepita/dessicated coconut
5 Tb melted coconut oil, 1 Tb raw honey, pinch salt,
Press into non stick pan- 12" / 30cm x 8" / 20cm, eg press up base tray or Springform pan or pie dish
Place in freezer
LAYER 2. Choc crackle -
Mix in mug in pot of hot water
8 Tb cacao/cocoa, 8 Tb cococnut oil, 3 T honey/maple syrup
Options - add to choc crackle -few drops of peppermint or orange oil or ginger pieces
Pour over cold base, save a few Tblspns for a drizzle topping
Place back in freezer til choc is set
LAYER 3. - Blend 16 prunes & 8 medjool dates,
2 Tb coconut milk or water, 4 Tb melted coconut oil, , 2 Tb cacao or carob
1 cup organic dessicated coconut or cashews
Tspn vanilla, pinch salt
If desired add chopped berries, dried apricots, figs or goji berries or chopped pecans/walnuts
Drizzle the left over choc crackle over the top
Sprinkle dessicated coconut, sliced cherries or crushed nuts on top if desired
Freeze til set, 1-2 hours
Slice and keep in freezer.

Instead of the almond flour, I used a mix of teff or millet, lupin and besan or ccnut flour.
Buttercream- I made it thick with ccnut oil and dessicated ccnut.
Just make the cream yum with what you have.
I placed half walnuts around top and in the centre of cake.

- cook in 1 tablespoon coconut oil, macadamia oil or ghee
