The grapefruit juice and yogurt combined gives the cake a sweet, yet tart flavor.
* 6 eggs
* 2 to 4 Tsp Maple Syrup (or honey), * 1/2 tsp vanilla extract
* 1 cup fat-free greek yogurt or Coconut cream/yoghurt
* 1 cup freshly squeezed grapefruit or orange juice
* zest of 1 large grapefruit or orange (about 3 teaspoons)
* 1/2 cup coconut oil, melted, * 2 tsp baking powder, * 1/4 tsp salt
* 1 1/3 cup coconut flour
Preheat oven to 220°C. Line loaf pan with paper or oil it with ccnut oil or ghee.
Beat eggs; add maple syrup, vanilla, yogurt, grapefruit juice and zest,
Add melted coconut oil in a constant stream, mixing continuously.
Fold in dry ingredients – baking powder, salt, and coconut flour. Mix well after each addition.
Bake for 45 to 55 mins, until toothpick comes out clean. Let cool for 5 mins.

Preheat oven to mod/350 degrees.
Oil two 8 or 9-inch cake pans or 1 large flat tray. Whisk the dry ingredients in a large mixing bowl. Blend all wet ingredients in a blender until smooth and creamy. Pour wet into dry ingredients and mix together. Add more flour if needed so dough forms a ball, but is still a little sticky. Generously flour a work surface using buckwheat flour or tapioca flour. Turn dough onto floured surface. Sprinkle top of dough with flour if it is too sticky. - just enough flour to be able to roll out the dough. Roll out dough using floured rolling pin [or push with fingers] into a large rectangle. Spread with tomato paste or coconut oil/ghee Sprinkle with filling of choice, keeping edges free.
