Make a sandwich using 2 or 3 fried eggs in a stack
Dip eggplant in seasoned egg, fry in ccnut oil or macadamia oil and stack it with salad
No need for bread to have a bun! 
Grated carrot or/and sweet potato with egg

Chicken sage Frikadeller BURGER -delightfullydelicious
Blitz 6  free range, chicken thighs-  in chunks
[or ground chicken, or beef, pork or turkey]
1/4 of an onion, handful of Parsley
1 garlic clove, 3 Fresh Sage leaves. 

Salt, Pepper, 1 egg
4 T flour -eg cornflour, Sorghum, cassava ,rice flour
3 Tblsp. butter

Mix all together and fry

For the Sauce
cook 2 medium large Crimini Mushrooms (slice mushrooms and onions in food processor )
1/4 onion
add 1 cup chicken stock
1 tsp. dry rubbed Sage, 1 Bay leaf
1/2 cup of dry white wine
salt and pepper, then slowly add
slurry of 1 Tblsp. cornstarch and extra stock

Serve with salad or veg and rice

1/4 cup celery,  1/4 cup onion, finely diced
1 large egg, lightly beaten
2 Tblspns mayo/ ccnut cream, tamari, vinegar/lemon, honey
2 Tblspns coconut milk, almond milk
6 ounces crab meat, tuna/fish
1 tspn Old Bay Seasoning
2 tspns dill pickle,  2 Tblspns parsley, finely chopped
2 Tblspns coconut flour, or potato, arrowroot flour
1/2 tspn kosher salt
few grinds black pepper
and for cooking- 2 Tblespns coconut oil, ghee

    Variations - add tuna, chopped spinach, 
    spring onion, grated zucchini, beet,  sweet tata, pumpkin  If needed - add another egg to bind it.
  • Top or serve with eg feta, smoked salmon, 
    vegetables-eg cucumber, tomato, carrot, cooked or grated beetroot, dill, fried egg, roast beef with red cabbage and oranges, smoked herring with radishes, chives or potatoes with butter.

Mushrooms, grated zucchini, eggplant, potato, sweet potato, beet,
Adding herbs - sage, thyme, rosemary-transform a veggie burger into a meaty, savoury treat.
For a firm burger, add binders. 
eg oats, breadcrumbs, cornflour, quinoa, amaranthus flour, ground flax/linseed or chia
Add protein. 
Try lentils, beans, tofu, nuts eg walnuts, Brazil nuts or seeds. OR roll burgers in sesame seeds.
You can grill the burgers- 
First, bake burgers in oven (or pan-fry). Cool and refrigerate overnight, then burgers will remain firm on the BBQ. Oil grill first, so burgers dont stick, Enjoy how substantial, satisfying, savoury and money saving they can be.

  • 2 medium zucchini, grate on large holes, 
  • toss it in 1 tspn salt in a strainer, after 10 mins-press liquid down drain,
  • to the dry zucchini add -2 large eggs
  • 2 scallions, minced
  • 2 tablespoons minced fresh dill
  • 1/2 cup feta cheese or thick coconut cream
  • 1 medium garlic clove, minced
  • 1/4 tspn pepper, 
  • 1/4 cup corn starch
  • 1/2 tspn baking powder
  • Fry in virgin olive oil, ccnut oil, ghee or dripping.
  • Use Lemon wedges, for serving
