Base - I ground 2/3 c hazelnuts, 1/3 c almonds
(I mixed 1 c of the nut meal, 2 eggs and 2 Tb cnut sugar for the base)
I then layered walnuts, organic dried apricots, coconut, medjool dates, carob molasses
- (I added the left over nut meal to the milk to make it thicker)

"CHEWY CHOCOLATE CANDY"!!! Yummmmmmmmy!
This recipe makes 16 bite-sized pieces. These are CHEWY and delicious!!
One of my TOP 5 ALL-TIME FAVORITE treats!!!
INGREDIENTS:
- 1/4 cup unrefined coconut oil
- 1/4 cup raw honey - I use 2 Tblspn
- 1 tsp pure vanilla extract (or 1/2 tsp pure mint extract)*
- Pinch of salt (optional)
- 1/2 cup unsweetened cacao/cocoa powder (or carob powder is sweeter and caffeine-free!)
- 1/8 cup chopped natural unbaked almonds -about 15 almonds
DIRECTIONS:
Melt coconut oil and honey together in a saucepan over low heat- or in a cup in a pot of hot water
Add salt (optional) and vanilla or mint extract, and stir to combine.
Add cocoa or carob powder, and stir until dissolved.
It may come together into one mass/lump when heating, and that's fine.
Add chopped almonds and stir to combine.
Line a small baking dish (eg bread pan) with parchment paper. Spread batter evenly onto paper.
Place in freezer until solid- doesn't take long. Cut/break into bite-sized pieces.
Store in FREEZER in a sealed container. If you prefer a “fudge-like” consistency, store in FRIDGE.
I also pour this choc over frozen fruit mousse 'pies' and freeze the 'pie'
*You may prefer mint extract when using carob powder, and vanilla extract for the cocoa version.
You can add any nuts, seeds, berries. - Banana added, gives it a texture like rocky road
eg add this list to this choc to make this CLUSTER recipe

Melt 1 cup cacao butter, 1 cup coconut oil, 10 mins in double boiler, add 1/8 cup cacao pdr, Sweetener eg 3 tspns Lohan, Stevia drops, maple, ground dates, natural honey, lucuma, yacon. The measurements don't matter.- remember we need 2-3 Tblspns coconut oil per day.
2/3 - 1 cup coconut oil, about 3-4 Tblspns cacao
1-2 Tblspns raw honey or maple syrup - to taste
1 cup or so seeds-gold linseeds / sunflower / sesame / pepitas
1/2 - 1 cup goji berries - or your choice of dried fruit eg apricots
about 1/2 cup nuts -almonds/walnuts/macadamias/pecans
Additions -2-3 bananas -mash with fork over fingers and drop into mix
1/2 cup dessicated coconut
-tip- to make it firmer-add 1/2 cup nut butter.
Pour/spoon into patty papers, molds or dish,
Variation -sprinkle nuts/coconut over and dob coconut cream/yoghurt on top
freeze for quick set, then keep in fridge
