Grandma's Magic Cake
Grandma's Magic Cake only requires 7 ingredients, and making it is fool-proof.
The cake has a dense layer on bottom, custard-like layer in the middle, and a fluffy cake layer on top.
Beat 4 egg whites until stiff.
In another bowl, beat 4 egg yolks, 1/2 cup sugar, 1 Tb water & 2 tsp vanilla until light.
Add 1 stick/125g melted butter, beat for another minute.
Mix in 3/4 cup GF flour, then 2 cups lukewarm milk - beat well.
Gently fold in stiff egg whites.
Pour into greased 8" x 8" (20 x 20 cm) baking dish (do not use spring form because batter is too liquid
Bake @ 325 F/170C oven for about 60 minutes or until top is golden.
Cool in pan for at least 3 hours.

LAYER 1- Blend 2 cup mix of nuts - cashews, almonds, walnuts and/or 
seeds for nut free eg sunflower/sesame/chia/linseed/pepita/dessicated coconut
5 Tb melted coconut oil, 1 Tb raw honey,  pinch salt,
Press into non stick pan- 12" / 30cm x 8" / 20cm, eg press up base tray or Springform pan or pie dish
Place in freezer
LAYER 2. Choc crackle -
Mix in mug in pot of hot water
8 Tb cacao/cocoa, 8 Tb cococnut oil, 3 T honey/maple syrup
Options - add to choc crackle -few drops of peppermint or orange oil or ginger pieces
Pour over cold base, save a few Tblspns for a drizzle topping
Place back in freezer til choc is set 
LAYER 3. - Blend 16 prunes & 8 medjool dates,
2 Tb coconut milk or water, 4 Tb melted coconut oil, , 2 Tb cacao or carob
1 cup organic dessicated coconut or cashews
Tspn vanilla, pinch salt
If desired add chopped berries, dried apricots, figs or goji berries or chopped pecans/walnuts
Drizzle the left over choc crackle over the top 
Sprinkle dessicated coconut, sliced cherries or crushed nuts on top if desired
Freeze til set, 1-2 hours 
Slice and keep in freezer.

Sesame seed bars - Melt 2 tbs coconut oil and 1/4 cup honey 
add - 1 cup of sesame seeds, 2 tbs almond meal , 1 tbs almond butter
Firmly press into tray - Bake 13-15 mins, cool in tray
Apricot delights-nobake
Process - 2/3 cup of sunflower seeds, 2/3 cup of apricots, 1-3 tbs maple syrup
Desiccated coconut for coating, press into tray and fridge

The Paleo carrot spice layer cake is yum, I made it for Mother's day and again the day after.
No one would know it is GF and healthy - it is as good as carrot cakes get.
I added some raisins/sultanas.
Instead of the almond flour, I used a mix of teff or millet, lupin and besan or ccnut flour.
Buttercream- I made it thick with ccnut oil and dessicated ccnut.
Just make the cream yum with what you have.
I placed half walnuts around top and in the centre of cake.

Mix - 3 eggs
1/2 cup honey/ccnut sugar or 1 cup apple sauce, (process 2-3 grannysmith apples)
1 cup coconut milk/cream,  
1/2 cup melted coconut oil or ghee, 
2 cups almond flour,
OR use a mix of 3 GF flours
(1 cup either waterchestnut, millett, sorghum, teff,
1/2 cup either lupin, besan/chickpea,
1/2 cup either cassava/arrowroot/tapioca

2 tspns baking pdr, 2 tspn baking soda, pinch seasalt.
1-2 T molasses/carob molasses/or  maple,
2 t vanilla, 2 tspns spice, or 1-2 Tblspn cinnamon.
Add a fruit/flavour as below
TIP-top each muffin with an almond, walnut.
Bake in muffin tins, 20-25 mins -mod oven
Fruit flavour options - 1 -2 cup raspberries, 2 bananas
Cup of dried fruit eg dates, prunes, raisins, apricots, pineapple, peach, cubed apple,
1 T grated lemon or orange zest, 1/3 cup cacao,
Nuts-1  cup walnuts,  pecans, almonds
2 tspns ginger, 2 tspns coffee
 1-2 carrots grated, grated zucchini.

Option -Choc crackle topping, 
Put muffins in freezer and when cold pour over choc
(melt these in a mug in a pot of hot water)
  • 5 tbs cacao butter or  coconut oil
  • 5 tbs raw cacao powder or carob pdr
  • 3 tbs honey, or 2 honey and 1 carob molasses
  • ½ tsp vanilla extract
  • keep muffins in fridge
  •  TIP- pour this choc over frozen fruit mousse.
  • TIP- pour this choc into tray & add nuts, fresh banana slices, seeds, dried fruit to make  a"Rocky Road". Freeze it

Alternative savoury muffin flavour

2 tsp baking powder, 1 tsp baking soda
2 tsp cinnamon
¼ tsp ground ginger, ¼ tsp ground cloves, 
¼ tsp ground nutmeg, 1/4 tsp sea salt
Add dry ingred to wet, add nuts if desired
Scoop batter into 12 prepared muffin cups  
Sprinkle on Streusel topping
Mix -¼ cup arrowroot, sorghum or millett flour
¼ cup almond flour
4 Tbsp sweetener, eg glucodin,  coconut sugar
1 tsp cinnamon, ½ Tbsp ground chia
stir in 3 tbsp melted coconut oil or ghee
Bake 12 muffins mod oven -  25 minutes.
cool 5 mins then place on wire cooling rack.

Bowl 1-Mix-

Bowl 2-

1 cup sugar/dairy free choc chips or/and raisins-prunes,dates, walnuts-pecans-almonds
Scoop small balls onto greased cookie sheets. 
Press down with fork if desired.
Bake 12-14 minutes

 Spoon mixture into dish and spread evenly.

Bowl 1- Sift 2 ½ cups blanched almond flour, 
plus more flour for dusting the dough
½ teaspoon celtic sea salt
½ teaspoon baking soda
Bowl 2 blend ¼ cup ghee/ coconut oil, 2 eggs
1 Tblsn maple or honey or glucodin
Blend flour into egg, make dough.
  1. Roll out between 2 pieces of paper to 1 ½ " thick
  2. Dust with flour- if sticky
  3. Cut dough into biscuits eg use 3" wide jar
  4. Transfer biscuits to a parchment lined baking sheet
  5. Bake mod/ 350° 15 mins, til browned on the bottom edges

In Bowl 1 mix - 2/3 cup glucodin, or coconut /palm sugar or 1/4 cup stevia
½ cup melted coconut oil, 2 large eggs
add 2/3 cup pumpkin butter -cinnamon, cloves, ginger, allspice, nutmeg, sea salt, honey;

1 tsp vanilla extract, 
add in 2 cups almond flour
1 tsp baking soda, 1/2 tsp seasalt
2/3 cup pecans or walnuts, chopped, raisins or & 
2/3 cup choc chips ( df, GF, sugar free)
Spread in greased 9 x 13"/22x32cm baking pan.
Bake about 20 mins. Check using toothpick.
Cool in pan 15 minutes before cutting.

About 4.5 ounces (128 grams) cherries /berries
3 eggs
1/4 cup almond flour, 2 Tbsp. water
1 Tbsp glucodin or honey or maple
1 tsp. vanilla, 1/4 cup Coconut milk/cream
Pit cherries/berries and chop in quarter pieces. 
Spoon 7 to 8 cherry quarters per muffin cup.
Beat eggs and add flour, water, honey, vanilla, and coconut milk, 
adding one at a time and mixing well.
Pour batter over cherries/berries, filling each muffin cup about half full. 
It’s okay if the cherries aren’t covered. 
Bake for 15 to 20 minutes. Cool and serve. Enjoy!

Wet Ingredients
4 large eggs, 1 tablespoon honey
¼ cup full fat coconut milk, ½ tspn vanilla extract
Combine dry ingredients in small mixing bowl.
Whisk together wet ingredients in large mixing bowl. 
Sift dry ingredients into wet ingredients. Whisk.
Cook in your waffle maker according to the manufacturer’s instructions.
If waffle maker has settings; use low browning.
Yields 4 standard waffles or 2 Belgian waffles
