Directions:
Peel the apples, of medium size
(choose Ionaton, Ionagold or Aidaret type as they will not crumble and lose their shape, once stewed).
Put them in a pot and add just a small cup of water and 1 lemon juice. For each apple add 1 tsp of maple syrup.
simmer covered until the apples become soft but keep their shape.
When ready, carefully pull out and place on a plate.
a) Filling:
100 gr of walnuts, ground to a flour/meal,
mix with the syrup from stewed apples and 2 tspns cinnamon and 2 tspns vanilla.
Stuff apples with the mixture.
b) Decoration in 3 easy steps:
1. Beat 2 egg whites, beat in 1-2 Tblspns maple syrup and pinch of salt;
decorate the apple tops with this snow.
2. Mix together 1/3 cup Tahini (Sesame organic paste) or peanut butter
with 1-2 Tblspn Maple Syrup or honey,
then spread it on the egg whites
3. To give a final taste, sprinkle additional lemon zest on top.

Dietdessertndogs/granola-topped-blueberry-pie-bars Make the crust: Preheat oven to 375F (190C). Grease an 8 x 8 inch (20 cm) baking dish with coconut oil. In a food processor, process the oats, brown rice flour, coconut sugar, psyllium husks, cinnamon, baking powder, baking soda, and salt for 20 seconds. Add the coconut oil, applesauce, and egg yolk. Using moist hands, pat half of the dough firmly and evenly into the greased baking dish. Crumble remaining dough into a bowl and mix in the the pecans and raisins. Set aside. Make the filling: In a medium bowl, mix together the blueberries, honey, lemon juice, and arrowroot starch. Spoon the blueberry mixture evenly over the crust. Crumble the remaining dough over the blueberry layer Bake for about 25 minutes, until golden brown. Cool completely, then refrigerate 1-2 hours before cutting into bars. Cinnamon Apple Chips
Perfect as party snack or wrap as a holiday gift. Makes about 40 chips.
In a large pot, combine apple juice and cinnamon and bring to a simmer while cutting the apples.
Slice off the tops and bottom of the apples. Cut cross wise into 1/8-inch even slices—a mandolin slicer works best. (No need to peel or core the apples—the seeds will come off in the next step.) Drop slices into simmering juice and cook until slices are translucent and slightly golden. With a slotted spoon, remove apples and pat dry. Arrange slices on wire racks, do not overlap. Bake 30 to 40 minutes until slightly browned and almost dry to touch - cool on racks completely. Store in airtight container. I double this recipe, so there's left overs - Inspired by Anna Olsen Preheat oven to mod/350 degrees F. Grease 9-inch round spring form pan. Make base - cream coconut oil and sweetener. Add applesauce and vanilla, beat well. Mix flours, baking powder and sea salt. Add alternately with milk until combined. Scrape into cake pan and smooth top.
