Process together
1/2 cup toasted pecans
1/2 cup dried cranberries
1 tsp. cinnamon
1 tbsp. honey or maple syrup
1 cup of apple juice or cider
2 tspn cinnamon or 2 cinnamon sticks
1 tbsp. ghee/ccnut oil/raw butter

Amy's Warm Glazed Apples
Directions:
Peel the apples, of medium size 
(choose Ionaton, Ionagold or Aidaret type as they will not crumble and lose their shape, once stewed). 
Put them in a pot and add just a small cup of water and 1 lemon juice. For each apple add 1 tsp of maple syrup. 
simmer covered until the apples become soft but keep their shape.
When ready, carefully pull out and place on a plate.
a) Filling:
100 gr of walnuts, ground to a flour/meal,
mix with the syrup from stewed apples and 2 tspns cinnamon and 2 tspns vanilla.
 Stuff apples with the mixture.

b) Decoration in 3 easy steps:
1. Beat 2 egg whites, beat in 1-2 Tblspns maple syrup and pinch of salt; 
 decorate the apple tops with this snow.
2. Mix together 1/3 cup Tahini (Sesame organic paste) or peanut butter
 with 1-2 Tblspn Maple Syrup or honey,
 then spread it on the egg whites
3. To give a final taste, sprinkle additional lemon zest on top.

CRUST:
½ cup Brazil nuts,  ¼ cup almonds
¼ cup shredded coconut
1 tablespoon cacao or carob powder
1 teaspoon pure vanilla,  Pinch of salt

Process until crumbly. - should stick when pressed between fingers. If too dry, add water  or honey (1 tspn at a time.) 
Press into  7-inch springform pan, or pie plate.

FILLING
2 cups blueberries (thawed) or any berry
1 cup cashews, finely ground
¼ cup + 2 tablespoons melted coconut oil
2 tablespoons melted cacao butter
¼ cup raw honey or organic maple syrup
1 tablespoon lemon juice
1/8 teaspoon salt

    1/6 cup water
    add 2/3 cup glucodin or use stevia or ccnut sugar
    ½ tsp salt
    1 cup GF flour mix
    ¼ tsp baking powder, ½ tsp baking soda

    Granola-Topped Blueberry Pie Bars
    from Super Healthy Cookies
    'Hello, Blueberry Pie!' Moist crunchy topping with juicy blueberry filling is just sublime. - very easy to make." 

    For the crust:
    1 cup gluten-free rolled oats
    1/2 cup brown rice flour
    1/2 cup coconut sugar
    2 Tbsp whole psyllium husks
    1 tsp ground cinnamon
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp fine sea salt
    1/4 cup virgin coconut oil, melted
    2 Tbsp unsweetened applesauce
    1 large egg yolk
    1/2 cup raw pecans or walnuts, finely chopped
    1/4 cup raisins [or chopped prunes]
    For the filling:
    1-1/2 cups blueberries
    2 Tbsp honey or maple syrup or coconut nectar
    1 Tbsp freshly squeezed lemon juice
    1 Tbsp (7 grams) arrowroot starch

    Thicken simmering berries and raisins/dates with a paste made of arrowroot, pour onto a GF crust-see above, or a nut crust

    Make the crust: Preheat oven to 375F (190C). Grease an 8 x 8 inch (20 cm) baking dish with coconut oil.

    In a food processor, process the oats, brown rice flour, coconut sugar, psyllium husks, cinnamon, baking powder, baking soda, and salt for 20 seconds. 
    Add the coconut oil, applesauce, and egg yolk. 
    Using moist hands, pat half of the dough firmly and evenly into the greased baking dish. 
    Crumble remaining dough into a bowl and mix in the the pecans and raisins. Set aside.

    Make the filling: In a medium bowl, mix together the blueberries, honey, lemon juice, and arrowroot starch. Spoon the blueberry mixture evenly over the crust. Crumble the remaining dough over the blueberry layer 

    Bake for about 25 minutes, until golden brown. 
    Cool completely, then refrigerate 1-2 hours before cutting into bars. 
    Store in an airtight container in the refrigerator.  
    Makes 16 bars.

    Crust
    1/2 cup walnuts or macadamias

    2 cups fruit eg pumpkin, berries, peaches apricots/pineapple/sweet potato/banana
    1 cup greek yogurt or coconut cream
    1/4 cup glucodin or honey or 1/2 cup dates
    1 T lemon juice
    1 T cinnamon, 1/8 tsp seasalt 
    2 eggs
    Pour into crust
    Bake mod for 50 - 55 minutes until no longer jiggly. Cool and enjoy  
    Options - add cocoa for choc cheesecake
    or if you like cheese - use this filling

    Cinnamon Apple Chips
    Perfect as party snack or wrap as a holiday gift.
    Makes about 40 chips.
      • 2 cups unsweetened apple juice
      • 1 cinnamon stick, or 1/2 teaspoon cinnamon
      • 2-3 Red Delicious Apples or other apple
    Preheat oven to 250° F.  
    In a large pot, combine apple juice and cinnamon and bring to a simmer while cutting the apples. 
    Slice off the tops and bottom of the apples. 
    Cut cross wise into 1/8-inch even slices—a mandolin slicer works best. (No need to peel or core the apples—the seeds will come off in the next step.) 
    Drop slices into simmering juice and cook until slices are translucent and slightly golden. 
    With a slotted spoon, remove apples and pat dry. 
    Arrange slices on wire racks, do not overlap. 
    Bake 30 to 40 minutes until slightly browned and almost dry to touch - cool on racks completely. 
     Store in airtight container. 
    For gifts, clear plastic bags and tie with ribbon
    For pies, soak in apple juice to reconstitute

    ~ Berry or Apple Buckle ~ a favourite
    ½ cup coconut oil or ghee
    ½ cup glucodin, coconut sugar/honey/maple/stevia
    3 tbsp applesauce / or process an apple
    1 tsp vanilla
    ½ cup brown rice flour/cassava flour/lupin flour/besan-chickpea flour
    ½ cup millet flour
    ½ cup arrowroot/cornflour
    2 ½ tsp baking powder
    1/4 tsp seasalt
    ½ cup milk  eg coconut or almond milk
    2-3  cups unfrozen berries/and or apple

    Buckle Topping
    1/3 cup glucodin, or some stevia, coconut sugar/honey/maple
    1/3 cup cornflour, millet or besan flour
    ½ tsp cinnamon
    2 tbsp coconut oil or ghee
    1/2 cup dessicated coconut - if desired
    1/2 cup walnuts - if desired 
    Use any berries or fruit, 
    I double this recipe, so there's left overs

    Preheat oven to mod/350 degrees F. 
    Grease 9-inch round spring form pan.
    Make base - cream coconut oil and sweetener. 
    Add applesauce and vanilla, beat well.
    Mix flours, baking powder and sea salt.
    Add alternately with milk until combined.
    Scrape into cake pan and smooth top.

    Buckle topping - combine and
     work in coconut oil/ghee with fingers til combined.
    add dessicated coconut and nuts if desired.
    Sprinkle berries on top of batter
     and then sprinkle with buckle topping.
    Bake at mod oven-350 degrees 
    for 45-55 minutes – test with a skewer/toothpick.

    12 Baked Fruit Pockets
    The daily dietribe/baked-fruit-pockets
    Ingredients:
    2 1/2 cups blanched almond flour (275 grams)
    (Put almonds in processor)
    1 cup brown rice flour (130 grams)  - or millett flour
    1/3 cup tapioca starch/cornflour (40 grams)
    1/2 tspn xanthan gum/guar gum
    1/2 tspn baking powder, pinch seasalt
    1 large egg
    1/2 cup applesauce - process 2 apples
    1/3 cup ghee or melted coconut oil
    3 tablespoons glucodin, maple syrup, honey
    1 tspn vanilla

    Filling: 
    3 cups chopped fruit, berries, 
    (dried fruit, for fruit mince pies)
    3 Tblspns water, 1/8 tspn seasalt
    2 Tblspns glucodin, maple, honey
     or 10 drops liquid stevia 
    Pockets
    Wash:
    1 Tblspn milk
    1 Tblspn maple syrup, honey 
    1. Fruit filling. In saucepan, bring fruit, water, salt, honey/stevia to simmer.
      Let reduce until thickened (20 mins) stirring, cool. 
    2. In bowl-mix flours, gum, baking powder, salt. 
    3. In a smaller bowl, whisk egg, applesauce, ghee, maple and vanilla.
    4. Stir wet ingredients into dry. 
    5. Form dough into ball with your hands.-  add more tapioca flour if sticky
      Place dough on wax paper. Press out til less than 1/4" - 1/2 cm) thick.  Sprinkle flour on top.
       Cut it in half both ways, then cut 12 small rectangles-about 6" x 2 1/2" (15 cm x 6cm)
    6. Place the small rectangle on tray, press if thick.
      Place a Tablspn of fruit on end of rectangle. 
      Fold side of dough over,  pinch to make pocket. 
      -Don't feel you have to be too precise. 
    7. Make 12 pockets.
    8. Bake mod oven 20 minutes. At 20 minutes, brush pockets with wash. 
      Bake 3 mins.  Eat with ccnut cream or let cool.

    * To make egg-free: In step 4, pour 3 Tblespns boiling water over 1 tblspn of flaxseed/linseed meal, sit for minute, then add wet ingredients
