~ Rose Petal Jam ~
She hadn't been back home, not since the world wars' end
She didn't know what she would find, what lay beyond the bend
She had run from here in fear, in fear for her life
Left her family, home and kindred, escaping in the night
God had her bound for England, to wed a lover there.
Now years later they'd come back, for her origins he cared
So, here they were manoeuvring, along this winding track
When suddenly she cried out. Stop, please stop and go right back
With joy, she scrambled from the car and bounded through the trees
He followed close behind and found her on her knees
Her hands were cradling roses, roses fragrant, sweet
Her lips were whispering - roses- petals falling at her feet
Oh darl', she murmured softly, the roses are still here
The roses of my childhood, memories so dear
I would pick them in the summer and take them in for Ma
For her to make rose petal jam... Oh, the cottage can't be far
But, if it's gone, we'll return, to where my heart once sang
Here, safe among God's roses
We picked for Mama's jam.

'Twas a touch of fragrant roses, kept in a pretty jar...
So we could savour summer
Made by our dearest Ma

Making rose petal Jam
The flavor of roses, is distinct
and immediately recognizable,
and rose petal jam looks as wonderful as it tastes.

- 1/2 pound pink or red or white (they are all edible) rose petals
- 2 cups sugar,
- 4 1/2 cups water
- Juice of 2 lemons, seeds removed
Fragrant red and pink old-fashioned double roses
(rugosas, floribundas, Old English, damask, and so on)
make the tastiest jam.
Pick roses in the late morning, after the dew has dried,
and before the sun has reached its height.
Grasp the entire flower by the tips of the petals
and pull it completely off its base.
Using scissors, trim off the white section at the base of the petals.
(Doing this immediately allows you to trim
a whole flower's worth of petals all at once.)

Wow your friends at afternoon tea . Serve scones or a sponge with cream and rose petal jam.
It's so easy to make and delicately scented.
3 1/2 oz - 100g of pesticide free rose petals [I used Papa Meilland]
3 cups of water
1 1/2 cups of sugar
1 tbsp lemon juice
1 1/2 tbsp of Jamsetta
Trim white or yellow ends from petals.
Combine petals and water in large saucepan and bring to boil , simmer covered for 30 minutes .
Strain, reserve liquid.
Combine reserved liquid , sugar , juice and Jamsetta in pan , stir over heat without boiling until sugar is dissolved.
Bring to boil ; boil uncovered without stirring for about 10 minutes or until jam jells when tested .
[At this stage you can stir in a few extra petals if you wish]
Pour into hot sterilised jars , seal when cold.
