"Pumpkin Cheesecake"
Crust:
Blend 1- 2 cups nut flour/meal and 2- 4 Tb ccnut oil or ghee
press into 10" spring form pan, or dish
Vanilla cream cheese filling
Process 1 cup coconut cream, 1 cup cashews, 1/4 cup lemon juice,
ts gluccie/gum, 2 ts coconut oil, Cream scooped off can of chilled ccnut milk,
2 ts gelatin dissolved in 2 T warm almond milk, Tbs vanilla, Tbs Protein pdr.
add 2 cups cooked pumpkin and spice.
Crunchy topping if desired:
Melt 1/4 c coconut oil, add to 1/2 C nut butter,
2 Tbs protein powder, 2 ts vanilla
1-2 Tbs chia or golden flax or chopped nuts,
If desired -2 ts cacao or some broken up or melted no sugar choc
chill then crumble over cheesecake.
Or cook berries, thicken with gluccie or chia and pour over top

Crust:

press into 10" spring form pan, or 11 x 7 dish
Peanut cream cheese layer:
Cream together 8 oz/1 cup cashew cream and 1/2 lemon juiced
1/2 c peanut or almond butter
slowly fold in 1/2 the *cream (recipe below)
Then Spread on top of crust. Chill
OR use Vanilla cream cheese layer
Process 1 cup coconut cream, 1 cup cashews, 1/4 cup lemon juice,
ts gluccie/gum, 2 ts coconut oil, Cream scooped off can of chilled coconut milk,
2 ts gelatin dissolved in 2 T warm almond or ccnut milk, Tb vanilla, Tb Protein pdr.
add berries and 1 cup cooked pumpkin to sweeten.
Crunchy layer:
Mix 1/2 C peanut/nut butter, 1/4 c coconut oil
1 Tbs protein powder, 2 ts vanilla
1-2 Tbs chia or golden flax
sweetener if desired, (freeze, then break up)
Sprinkle nut crunch onto cream cheese (save some for top)
Chocolate cream layer:
Fold 1/4 cup cacao
into 1/2 the *Cream (recipe below) and spread on top

Place in freezer, for about 3 hours before serving.

Place 3 cans of coconut milk in freezer til chilled and firm - or fridge overnight.
Stir 2 ts gelatin into 4 T water in a small sauce pan, then gently heat, stir till dissolved. Let cool.
Beat coconut cream off tops of 3 cans, add sweetener, drizzle gelatin mix in while beating, fridge.

French Silk Choc Mousse THM
2 sticks of butter, softened, 4 ozs. no sugar choc. squares, melted
2 t. Vanilla, 4 eggs, Sprinkle of salt
1/8 to 1/4 tsp. NuNaturals Stevia
Beat the butter, melted chocolate, salt, and vanilla together. Add 1 egg at a time,
beating each egg for a full 5 minutes. That makes for 20 minutes of beating.
Sweeten with stevia to taste and put in small dessert bowls or ramekins. Should serve at least 8 people.

1 cup almonds, ¼ cup soft dates, 1/8 teaspoon pure vanilla, Pinch salt
Process until crumbly -stick when pressed together between fingers.
If it's too dry, add a little water or honey if it isn't quite sweet enough (1 teaspoon or so at a time.)
Press into 7-inch springform pan, or into a pie plate.
Filling
2 cups cashews/macadamias, soaked for at least 1 hour
½ cup water, 1/4 - ½ cup raw honey
2 tblspns lemon juice, 1 ½ tspns pure vanilla
¼ cup + 2 tblspns coconut oil, 1 tblspn lecithin powder
1. Process first five ingredients in blender until completely smooth.
2. Add soft coconut oil and lecithin and blend briefly.
( add any fruit desired, eg if you'd like a larger cheesecake)
3. Pour the filling onto crust. Chill or freeze for a few hours, or until firm.
Variations:
~ Add any kind of fresh fruit (eg berries) to this cheesecake, either inside or layered on the surface.
~ Serve drizzled with Berry Jam or Sauce.
Jam- 1 ½ cups fresh or frozen berries such as blueberry, raspberry, strawberry, etc.
1 or 2 tblspns raw honey, Juice of ½ lemon
mix all ingredients by hand, crushing the berries with a fork.
