Universal method for making milks
Soak: soaking releases enzyme inhibitors
Rinse:

Strain:
Squeeze: twisting cloth, wring all the liquid from the pulp.
Bottle and Chill: refrigeration and consumed within three days.

Salt: add a pinch of fine ground sea salt - it enhances flavour
Sweeten: optional, dates, honey, pure maple syrup, sucanat, molasses, brown rice syrup, coconut sugar, stevia.
Enrich: 1 Tbsp of coconut butter makes milk creamy.

Turmeric milk drink

 Rice Milk: great for baking and pouring over cereal.
• Hemp Milk: Thick, try before buying/making lots, some people DON'T like the taste
• Oat Milk: good for oatmeal and baking.
• Almond Milk: Loaded with protein and fiber -cashew and hazelnut are available at some health-food stores.
• Coconut Milk: Canned or boxed for baking, mousse, oatmeal and ice cream
• Raw or Organic Milk/goats milk: Grocery store milk is full of hormones and stripped of
nutritional value. Try a local co-op, or research raw milk sources in your area -always buy organic milk.


Sunflower seed milk or almond milk
Soak 1 cup of seeds or almonds overnight, drain, 
put in Ninja blender with 2 L water, and blend. Pour it through a brand new stocking to filter.
Coconut milk
1 cup coconut in blender. add 4 cups hot water, soak overnight or day, then blend a few times. 
Strain and bottle the milk. Use the coconut in muffins or crumble toppings, freeze it or dehydrate it.

Any nut can be made into milk, and many seeds. 
Cashew, walnut, hazelnut and sunflower seed milk  are lower in fat and carbs .
Use 1/8 cup of nuts to 1 quart of water. Put in the blender and blend for several minutes. 
A regular blender will work. The longer you blend, the creamier it will be. 
Strain through a very fine mesh strainer, or through a non fuzzy kitchen towel laid over a colander. 
You can make the cashew, hazelnut or walnut milk stronger 
(ie 1/2 cup nuts to 1 quart of water). 
You can also use pecans, macadamia nuts, or brazil nuts. 
Flax seed milk is easily made, and sesame seed milk. 
very low in fat and carbs - but very strong though (just a word of warning).
so try flax seed milk with 1/8 cup flax seeds to 1 quart of water. -It is harder to strain, as it becomes slurry after blending, but it does make a nice creamy milk. 
If you like nut/seed milks thicker, blend in a tspn glucomannan, after you strain the milk.

Non Dairy Milk Alternatives

 1 can full fat coconut milk,  in the fridge overnight or at least 4 hours
- 1-2 Tbsp. fresh lemon juice or apple cider vinegar
- 1/8-1/4 tsp. sea salt
Scrape out the cream from can into a medium sized bowl. 
Hint: open can from base and pour the milk into a jar before scraping out cream. 
(use the milk for smoothies and other recipes).
Whisk sea salt and lemon juice or vinegar into cream. 
Taste and add more lemon juice or sea salt if needed.

Cheesy sauce ~ for lasagne, macaroni cheese
Saute 1 onion in coconut oil or tallow/lard,
add 1 tspn ginger paste, 1 tspn mustard,
1 tspn smoked or normal paprika,
 1 Tblsp turmeric,
1/2 tspn cardamon,  1/2 tspn cummin and coriander,
2 Tblspns rice MISO- from health shop,
seasalt and pepper to taste, Add can of coconut milk,

thicken with paste of 1/2 cup water, heaped Tblsp arrowroot flour.

Baked Noodle 'cheese'
prepare 3 to 3 1/2 cups konjac noodles
OR squash noodles or zucchini noodles or any cooked sliced veg
Make cheesy sauce, by processing/blending
3/4 cup raw cashews , 1/2 cup raw brazil nuts 
3 tbsp lemon juice , 1 clove garlic 
1 cup water , 1 1/2 cups almond milk or ccnut milk 
2 tbsp ccnut oil, 1 tsp sea salt , 1/2 tsp onion powder , 1/4- 1/2 tsp dry mustard 
1 ts gum/gluccie or 2 tsp psyllium,or chiameal,or flaxmeal, for how thick you desire the sauce to be
Add 1/2 ts turmeric if you desire yellow colour
Mix noodles with sauce, and pour into ccnut oiled 8 x 12” baking dish. OR layer cooked veg and sauce in dish
Topping -eg sliced tomato, yeast flakes, dobs of ghee, sesame seeds
Cover with foil, bake 15 mins, remove foil, bake 5 mins

Basic Cashew Cheeze
3 cups cashews, soaked 12 hours,  1 cup water (adjust if needed),  4 probiotic capsules
Process ingredients in the OPTIMUM blender for approximately 30 seconds.
Scrape down sides, process another 30 seconds or until smooth. Use the tamper to keep mixture moving.
Transfer mixture to cheesecloth-lined strainer and cover with a plate. 
Place a weight on top to gently press some of the liquid out. 
If cheeze pushes through cloth/strainer, then the weight is too heavy or the holes of the strainer are too big.
Leave in a warm place to culture for 36 to 48 hours. 
The culturing time will depend on how warm your house is and how ‘ripe’ you like your cheeze.
NB: For best results in terms of texture, it is key to use as little liquid as possible. 
You will need 1 cup of this recipe for Garlic Dill Cheeze, 
you can eat the rest as a spread, salad dressing, dip or freeze a portion of it in an airtight container. 
It will last one week in the fridge.

Garlic Dill Cheeze, 
1 cup Basic Cashew Cheeze , 1 tablespoon minced fresh dill
1 generous teaspoon minced garlic, 1 teaspoon minced chives
1 teaspoon nutritional yeast , 1 teaspoon onion powder 
1⁄2 teaspoon Himalyan salt, 1⁄4 teaspoon lemon juice
OPTIONAL: Finely ground almonds, dried dill and garlic powder for the crust
Place all ingredients except ground almonds, dried dill and garlic powder for the crust in a bowl. 
Stir until well combined. Taste and adjust the salt, if needed.
Press mixture firmly into a small container, ramekin, mould or bowl lined with plastic film.
 Sprinkle the ground almonds, dried dill and garlic powder on top. 
Chill for at least 12 hours to allow flavors to mingle and the cheeze to firm up.
When firm, turn over and gently remove from the mould, transferring cheeze onto a plate. 
Sprinkle more dried herbs on top and sides.
Store in the refrigerator in an airtight container for up to one week.
VARIATION: use it as a spread.

Preparation:
  • Blend all for 2 minutes til white/creamy.
  • Strain in nut milk bag, fine mesh strainer or  layers of cheese cloths. ( nut milk is bag faster, easier)
Save the almond paste in the strainer, spread over a cookie sheet, and dry using dehydrator or oven on lower heat setting.Grind in food processor and use as almond flour. Because the almonds lost flavor and fat, mix with regular almond flour.

Make Rice Milk
In Thermomix, 50g brown rice 1 min, speed 8
Add 1000g water, cook 7mins, 100C speed 3.

Add 1 tspn organic salt, 1 Tblspn ccnut oil
Turn dial from 1 to 8 grad to puree for 1 min
when cool add 1 T honey if desired

Bottle and refridgerate.
Stove top
Use about 4C of water for 1C of rice. 
Different rices yield different flavors / strengths, 
and so water amounts vary to match the rice.
Add boiling water to rice, simmer for hour or so.
2-3 Hours for brown rice
 Add to food processor,  puree til smooth. 
If flavoring is desired,  add.

Serves 1
1/2 cup strawberries 
1/2 cup blueberries 
1/2 small avocado 
1 tbsp hemp seeds or chia seeds
1 handful spinach 
1 1/3 cup coconut milk or almond milk (or coconut water)
Blend all ingredients till smooth, and serve.

4 cups rice/almond/oat milk- sugar free
1 Can Coconut milk or cream
4 heaped Tblspns cornflour or chia
2 tspns vanilla
1 Tblspn maple syrup
2 Tblspns honey/glucodin
add 2 eggs if desired

adjust to how thick or how sweet you desire

2. Olive Butter Recipe
Ingredients:
1/4 cup extra-virgin olive oil,
 1/4 teaspoon sea salt
Directions:
1. Whisk sea salt and olive oil in a small bowl.
2. Pour in small container, freeze 4 hours, or until solid.
cut off squares to add to steamed vegetables, baked sweet potatoes etc.
This olive butter will keep for months in the freezer.

3. Soft Whipped Coconut Butter Recipe
1/4 cup coconut oil, 
1 tablespoon light miso
Directions:
Use a fork to mix miso with coconut oil. 
Voila - coconut butter like soft whipped butter.

4. Macadamia NUT BUTTER 
I double recipe, and freeze one plastic jar 
sets like butter in fridge.. use any cold pressed oils eg avocado, macadamia etc 

½ cup macadamia nuts or pine nuts
1 tablespoon linseed/Flaxseed oil
1 tablespoon extra virgin olive oil
1 tablespoon fresh lemon juice
¼ cup distilled / boiled cool water
1 teaspoon Celtic Sea Salt
1/3 cup organic coconut oil


Process nuts, oils, lemon juice, water, sea salt.
Add a little water if needed to reach creamy consistency.
Add coconut oil and blend again.
Place in mold or glass jar and refrigerate or freeze.
OPTIONS - Butter is used for sweet & savoury-
but you can add flavours eg
minced fresh herbs,  garlic, raw unfiltered honey.
Coconut Macadamia Nut Butter
  • 1.5 cups raw, unsalted macadamia nuts
  • 3/4 cup Coconut Chips (or shredded coconut)
  • Pinch of salt
Process nuts until a butter is formed, about 4 minutes.
Add in 1/2 cups of coconut chips and pinch of salt and blend to a smooth nut butter.
Stir in the remaining 1/4 cup of coconut chips to give it some texture. Makes over a cup of nut butter.

Easy Caesar Dressing
ingredients:1/2 cup water
1/2 cup olive oil
2 ribs celery chopped
2 Tblespns plus 1 teaspoon lemon juice
3 Tblespns wheat free tamari
2 Tblspns chickpea, rice or mellow white miso
2 tspns honey or other sweetener of choice
1 Tblespn dulse flakes/dried seaweed-optional
1 garlic clove (minced or in high speed blender)
1 tablespoon nutritional yeast
preparation:Blend all ingredients until smooth (preferably high speed blender) serve on chopped Romaine or any  salad greens.

About five small tomatoes, 
one large sweet bell pepper, 
small bunch of spring (green) onions, 
half a lemon, 
and three to four cloves of garlic.
a good pinch of sea salt and pepper, 

then blend until smooth.
For sweetness, add mango.
For richness and added texture, avocado.
And if you like to sniffle add chilies
