1 cup coconut in blender. add 4 cups hot water, soak overnight or day, then blend a few times.
Strain and bottle the milk. Use the coconut in muffins or crumble toppings, freeze it or dehydrate it.

Any nut can be made into milk, and many seeds.
Cashew, walnut, hazelnut and sunflower seed milk are lower in fat and carbs .
Use 1/8 cup of nuts to 1 quart of water. Put in the blender and blend for several minutes.
A regular blender will work. The longer you blend, the creamier it will be.
Strain through a very fine mesh strainer, or through a non fuzzy kitchen towel laid over a colander.
You can make the cashew, hazelnut or walnut milk stronger
(ie 1/2 cup nuts to 1 quart of water).
You can also use pecans, macadamia nuts, or brazil nuts.
Flax seed milk is easily made, and sesame seed milk.
very low in fat and carbs - but very strong though (just a word of warning).
so try flax seed milk with 1/8 cup flax seeds to 1 quart of water. -It is harder to strain, as it becomes slurry after blending, but it does make a nice creamy milk.
If you like nut/seed milks thicker, blend in a tspn glucomannan, after you strain the milk.

Make cheesy sauce, by processing/blending

1 cup water , 1 1/2 cups almond milk or ccnut milk
2 tbsp ccnut oil, 1 tsp sea salt , 1/2 tsp onion powder , 1/4- 1/2 tsp dry mustard
1 ts gum/gluccie or 2 tsp psyllium,or chiameal,or flaxmeal, for how thick you desire the sauce to be

If cheeze pushes through cloth/strainer, then the weight is too heavy or the holes of the strainer are too big.
Leave in a warm place to culture for 36 to 48 hours.
The culturing time will depend on how warm your house is and how ‘ripe’ you like your cheeze.
NB: For best results in terms of texture, it is key to use as little liquid as possible.
You will need 1 cup of this recipe for Garlic Dill Cheeze,
you can eat the rest as a spread, salad dressing, dip or freeze a portion of it in an airtight container.
It will last one week in the fridge.

1 cup Basic Cashew Cheeze , 1 tablespoon minced fresh dill
1 generous teaspoon minced garlic, 1 teaspoon minced chives
1 teaspoon nutritional yeast , 1 teaspoon onion powder
1⁄2 teaspoon Himalyan salt, 1⁄4 teaspoon lemon juice
OPTIONAL: Finely ground almonds, dried dill and garlic powder for the crust
Place all ingredients except ground almonds, dried dill and garlic powder for the crust in a bowl.
Stir until well combined. Taste and adjust the salt, if needed.
Press mixture firmly into a small container, ramekin, mould or bowl lined with plastic film.
Sprinkle the ground almonds, dried dill and garlic powder on top.
Chill for at least 12 hours to allow flavors to mingle and the cheeze to firm up.
When firm, turn over and gently remove from the mould, transferring cheeze onto a plate.
Sprinkle more dried herbs on top and sides.
Store in the refrigerator in an airtight container for up to one week.
VARIATION: use it as a spread.

I double recipe, and freeze one plastic jar sets like butter in fridge.. use any cold pressed oils eg avocado, macadamia etc ½ cup macadamia nuts or pine nuts 1 tablespoon linseed/Flaxseed oil 1 tablespoon extra virgin olive oil 1 tablespoon fresh lemon juice ¼ cup distilled / boiled cool water 1 teaspoon Celtic Sea Salt 1/3 cup organic coconut oil Process nuts, oils, lemon juice, water, sea salt. Add a little water if needed to reach creamy consistency. Add coconut oil and blend again. Place in mold or glass jar and refrigerate or freeze. OPTIONS - Butter is used for sweet & savoury- but you can add flavours eg minced fresh herbs, garlic, raw unfiltered honey. |
